While strolling through Target, which is one of my favorite Saturday pastimes (Does anyone else do that to just “get away”?), I came across a product that caught my eye: Birch Benders Paleo Pancake Mix. I am usually leary about buying mixes since, although a company’s intentions may be good, their ingredients ultimately aren’t. But after quickly scanning the list of this pancake mix, I decided to give it a try.
If you are a fellow Paleo follower, you have probably tried homemade pancake recipes that use coconut flour, almond flour, cassava flour or any combination of the three to varying degrees of success. So when I saw this Paleo pancake mix (which uses all three flours), I figured that it was worth a try.
So here it goes. Let’s see how these pancakes stack up (pun intended)…

Birch Benders is a pancake and waffle mix company from Denver, Colorado. According to their website, they are dedicated “to make pancakes that are better than at a restaurant and easier than from scratch.”

Pros of Birch Benders Paleo Pancake And Waffle Mix
- Overall, I love the ingredients, but that’s because I’m Paleo-minded.
- The mix is easy. Just add water and mix.
- I love that there is no added sugar. With the monk fruit, the mix contains less than 1g of sugar per serving.
- The pancake mix is Gluten Free.
- The pancake mix is Grain Free.
- The pancake mix is Dairy Free.
- I absolutely love that Birch Benders Paleo Pancake and Waffle Mix is Made in the USA!
Cons of Birch Benders Paleo Pancake And Waffle Mix
I only have a few, minor, nit-picky complaints:
- Not all ingredients are organic, but they didn’t claim to be. If you want an all organic mix, try their organic, gluten-free pancake mix.
- They don’t specify what kind of eggs they use. I prefer to cook with pastured eggs.
- The ingredients list doesn’t specify the type of “spice” that is used.
How Many Servings Does Birch Benders Paleo Pancake And Waffle Mix Make?
According to the package information, the entire bag of the mix should make 22 medium (4″) pancakes. Ehh…Not so much at my house. Even when cooking with the slightly “looser” batter, I wasn’t able to yield 6-7 pancakes. Instead, my first attempt only made 5 pancakes. But either way, one package of Birch Benders Paleo Pancake And Waffle Mix served my entire family of 4 with a few left over. For only a few dollars, this Paleo pancake mix was a decent purchase for the money. (See the section below on where you can buy a bag and see for yourself.)
Honest Rating of Birch Benders Paleo Pancake And Waffle Mix
On a scale of 1-5 (where 5 is the best): Our family rates this a solid 4.5
We enjoyed these pancakes. They cooked up fluffy and are reminiscent of conventional flour-based pancakes. The monk fruit adds a pleasant taste, but not overly sweet (at least in my view). My kids, however, didn’t appreciate the sweetness and thought that there was a slight after-taste. But for me, I enjoyed the extra sweetness so I topped my pancakes with grass-fed butter and pastured eggs and didn’t miss the syrup. Major Plus!
I cooked the pancakes according to the instructions and used coconut oil which gives the pancakes a lovely crisp around the edges. The first few pancakes were thinner than I had hoped, but the last pancake was much fluffier. I have heard that you should let your pancake batter sit for 10-15 minutes before cooking with the batter so I guess that this mix is no exception.
However, with my next round of pancakes, I used slightly less water (maybe 2 Tablespoons less) than called for in the recipe. These pancakes were noticeably fluffier from the moment that they hit the skillet. But either way, both sets of pancakes were great.

Conclusion – Birch Benders Paleo Pancake and Waffle Mix
I will and have already purchased this product again and I may try some of their other flavors. Although I would rather create my meals from scratch using ingredients that I personally select, I’m fine with serving these quick/easy pancakes occasionally. And with summer vacation coming up, I will definitely be sure to bring along a bag of Birch Benders Paleo Pancake And Waffle Mix.
